This sort of body language seems to convey patience. Here you see that a player has just received her fourth card in seven stud. She apparently has little interest in this pot. Players who are winning and wish to sit on their lead will often simply lean back and wait for good opportunities. When you see someone whose mannerisms are similar, you can be pretty sure she'll play only quality hands. If this player were trying to deceive you, she'd probably do more than just cross her arms and stare. She'd likely look away from the action or even start to throw her hand aware prematurely, which isn't the case here.
